Bonuses is the audits go well and we smash kpi’s. Worst thing is need to give a lot of notice for holidays. They offer zero hour contracts so no worker rights and hours could be cut on performance. Or if manager has grudge.
Get regular bonuses (Monthly and 3 quarterly) based on pub performance, hours very flexable, I go full time when im on holiday from uni and there normally pretty fair.
