Company Updates

  • Yesterday was the induction day for our new apprentice chefs!

    The day included an overview of how to prepare for life as a Fuller's apprentice chef, both at university and working in our pubs. Various other topics included how to read a contract, capped and guaranteed hours, earning as you learn, looking after well being, writing a code of conduct, a demo and talk from the Director of Food, tasting the Fuller's only fresh produce, working as a team and respecting the ingredients.

Behind every one of our delicious dishes, there’s a team of talented and dedicated chefs with a real passion for fresh food.

Our chefs are highly skilled, brilliantly creative and put their heart and soul into every single one of the courses they create.

Naturally, we give them all the ingredients they need to bring great food to the pass - but that doesn’t just mean seasonal, locally sourced produce. It means providing the right tools for the job, investing extensively both in the development of our kitchens and in superb standards of chef training.
Indeed every single chef that joins our ranks, regardless of experience or position, is enrolled onto our development programme. 
Our kitchen creatives are also mentored and supported by Fuller’s Executive Chef team - some of the very finest foodies in the business, with years of Michelin-star experience between them.

Who we are looking for?

Fuller's are recruiting for talented people to go onto our Chef Apprenticeship Programmes. These people will become the Fuller’s Head Chefs of the future. We believe our Apprenticeship Programmes are the best in the industry. But don’t take our word for it, listen to what our current apprentices have to say about the programme. All we need from you is determination and drive to succeed. If you possess these qualities, we will make your career thrive.

What kind of Apprentice roles are available?

We have 2 Chef Apprenticeship Programmes:

- Commis Chef (this used to be NVQ Diploma in Professional Cookery Level 2)

- Chef de Partie (this used to be NVQ Diploma in Professional Cookery Level 3)

There are a couple of things we need to understand about you before you start our programme but we will invite you to a day at University or College to find these things out. We also pay for your Apprenticeship; so no student debt!

When can you start?

We have 2 intakes for each of the programmes, one in March and one in September. We recruit all year round so you can join us at any time and go onto the next available programme. We believe that having structured intakes onto our programme gives you the best start to an apprenticeship and you will be part of a group that all develop together and help each other along the way.

What can you expect?

Working in a Fuller's Kitchen is exciting and will challenge you every day. This, from our experience, will stretch you and become a great chef capable of working in any Kitchen worldwide. You will receive training with some of the best catering lecturers in the country. One day a week will be spent at University or College (depending on your location) and then you will spend 4 days at your pub honing the skills you have learnt at training. All of this time will be paid for. We will also pick up the bill for your travel to and from training.


The Chef Scholarship Programme has been designed to provide chefs with all the skills and qualifications needed to progress to head chef level. Throughout all levels of the scholarship chefs attend workshops, visit suppliers and work closely with our skilled Head Chefs in a variety of kitchens across the business.

The Chef Scholarship Level 1 programme has been developed to give delegates some of the kitchen skills needed to progress their career up to chef de partie. Throughout the chefs work closely with their head chef and attend workshops to build up their repertoire of Fuller’s kitchen skills.


The Chef Scholarship Level 2 programme has been developed to provide the kitchen skills needed to progress your chef career up to sous chef. Throughout the course chefs will work closely with their head chef to build a diary of evidence for the nationally recognised Level 2 Award in Cookery Theory and Practice.


The Chef Scholarship Level 3 development programme has been specifically designed to up skill our high performing sous chefs into our future head chefs. Scholars will be coached through a series of workshops, visits, and projects including topics such as management techniques, culinary skills and supplier experiences. Scholars will also undertake a self-study program using the BIIAB level 3 award in kitchen management. During the programme chefs will be working towards the nationally recognised Level 3 Award in kitchen management.

Fuller’s is extremely proud of the industry-leading training that is offered to employees all over the business. From wine and beer training for teams within pubs, world-class chef apprenticeship and scholarship schemes, and courses that cover marketing and finance topics for the development of General Managers, it’s this type of training that opens the doors to the vast career opportunities and progression at Fuller’s.


The management training programme is designed to develop the skills, knowledge and behaviours of assistant and deputy managers in our estate to aid their career progression by enhancing leadership ability. It covers topics such as team development & recruitment skills, operational management, business acumen and commercial thinking as well as influencing and communication skills.


Learning to lead is a development programme designed to give delegates the skills they need to positively influence and motivate their team, whilst driving the business forward, setting them up for a supervisory role. It covers topics around problem solving and creative thinking as well as communication, training and coaching skills.


This programme offers support managers within our business the skills, expertise and foundation to deputise for the General Manager position. It covers topics such as recruitment, finance, marketing, F&B management and ends with a project presentation.

    Management are so relaxed and the atmosphere is made to feel like you’re not really working though you’re at work. Managment and staff are both so friendly and you really feel like a team working there. Also they have a great tip system.

    I applied in-person. The process took 2 days. I interviewed at Fuller's (Ealing, England) in April 2014.


    Straight up interview, one person interviewing. Usual set of competency and motivational questions, lasted about 40 minutes. Asked you to tell them something about yourself. No trick questions, very straightforward and honest. Got back to me within a day to let me know they were happy for me to start immediately.
