I stayed for a while despite the dysfunction, because it was good reliable money.
Cons
You are completely overworked; at any given moment there are at least 15-20 tasks to do, which doesn't give you time to focus on customer service as much as you should, because you barely have time to breathe or think. It is extremely overwhelming. You have the full bar that seats 16 people, and 5 four top tables to look after simultaneously. There is only one busser for the entire restaurant, no barbacks, no official runners (just whoever is kind hearted enough to help out), and it gets REALLLL busy. Management is unreliable and plays favorites a lot, and your hard work for the most part goes unacknowledged.
And on the other hand, the servers are kind of rude and don't like to work. The second they arrive they are already begging to leave, they don't prebus their tables (which makes it even more difficult on the busser), and they complain all shift long about small trivial things. I don't blame them though, it's a sucky job, and I guess they've just been there long enough to succumb to the spirit... but it does create a negative vibe.
Overall it is not a good work environment, and it is severely exhausting. But if you're looking for easy and quick money, then whatevs... management is used to dealing with a high turnover rate.
