We're opening the kitchen at the brand-new Locke Canary Wharf, a striking 19-floor waterfront aparthotel in the heart of Wood Wharf, and we're looking for a Chef de Partie to run a section across a varied food offer: an all-day café, a buffet breakfast and an à la carte evening menu. This is a ground-floor opportunity in every sense: a fresh concept, a beautiful new building, and a team being built from day one. We're White Rabbit Hospitality, the team behind some of the most loved dining and hotel destinations in the UK and beyond, including Rusacks St Andrews and Santa Joana, Lisbon. At Locke Canary Wharf, we're bringing that same standard to a vibrant, design-led space serving residents, guests and the wider Canary Wharf community from breakfast through to dinner. As a Chef de Partie here, you'll be part of one of London's most exciting new hospitality openings.

What you'll be doing

  • Running your own section across all three services: buffet breakfast, all-day café and à la carte evening
  • Setting up, replenishing and maintaining the buffet breakfast to a consistently high standard
  • Delivering accurate, well-presented à la carte dishes to brief during evening service
  • Maintaining strong mise en place and keeping your section clean, organised and fully stocked across changing services
  • Following all food safety, allergen and HACCP procedures to the letter
  • Supporting and helping to train Commis Chefs and kitchen team members
  • Managing stock on your section, minimising waste and supporting accurate ordering
  • Working closely with the wider kitchen and front-of-house team to deliver smooth, calm services
  • Helping refine and improve the café, breakfast and evening menus as the site establishes itself

What we're looking for

  • Previous experience as a Chef de Partie, or a strong Commis Chef ready to step up, in a hotel, café or restaurant kitchen
  • Comfortable working across both high-volume buffet service and à la carte plating
  • The ability to run a section confidently and deliver consistent quality under pressure
  • Strong understanding of food safety, allergens and kitchen hygiene
  • Reliable, punctual and ready to set the pace, including early starts and evening services
  • A genuine team player who supports and lifts those around them
  • A passion for great food and a desire to grow with a brand-new opening
  • The right to work in the UK
