Interview
I arrive at 11am to do a tasting, I had sent them an ingredient list that they had ready. I prepared my menu over 4 hours in their kitchen. They allocated some space in the back and I made 2 dishes. I did have to prepare some of the items on the hot line in service but they were accommodating and made plenty of room for me to work.
