I was called for an interview at one of the Simmons bars. Once I arrived, I saw another 10-15 people waiting for an interview, The process itself was quick with random selection and the staff was friendly and accommodating.

They asked me for how long I lived in London and if I had any bartender experience.
For me there was a group assement period before people were selected for private interviews with particular bar location managers. If you succeeded or caught the attention of a general manager during the interview process you would be offered a job pretty immediately.

A nice wholesome interview event with multiple activities like designing your own cocktail, an interaction round and then an interview with very basic employment history questions, the key is to be an easy going person with experience with bartending
