Phone interview, grammar testing for English and second language (in my case Portuguese - native) and interview in person (before COVID) and office tour. Everybody was really friendly during the whole process.

There is a French and English Test. Then you have an interview with a manager and they ask you behavours questions about who you are in a company, what do you know about booking.com

After a phone call interview, you will be asked to interview at the office. The process takes about 3 hours including company's presentation, language tests : English and the language you applied for ( grammar and reading comprehension); next is a phone call role play in the language you applied; then a face to face interview with CS team lead and HR manager
