Our Mac n Cheese is one of the recipes we completely overhauled recently. We listened to a LOT of feedback from our guests and our teams and went back to the drawing board. It's a really popular dish in the Caribbean (often served as Macaroni Pie) and we knew we wanted ours to pay homages to flavours from the islands whilst still being a real soul-warmer. In our final recipe, we blended loads of spices into our cheese sauce - like nutmeg, paprika - and plenty of chilli for a real ZING. It took months of development but we're SO happy with the result.
